Eggless Banana Cake

I was always  in a dilemma with usage of over ripe bananas . They were unappetizing but edible but I didn't know how to use it till i started seeing a lot of banana based bakes online . I found this recipe for banana egg less cake on a website and the best part was it was of whole wheat flour . After baking and tasting it I can say it doesn't compromise much on taste and will be loved by all . Watch this banana bread , with the aroma of bananas ,disappear in a jiffy.

Serves: 3

Ingredients
Whole wheat flour - One and a half cups
Ripe Bananas - 2
Cooking(Sunflower) Oil - 3/4 cup
Sugar - 1/2 cup 

Milk - 1/4 cup
Baking powder - 1 teaspoon
Baking soda - 1/2 teaspoon
Vanilla essence  - 1 teaspoon
Walnut/nuts - 1/4 cup finely chopped or crushed
Raisins - 1 tablespoon


Method:
  1. Preheat Oven at 180 Degree Celsius for about 10 minutes.
  2. Sift the flour ,baking powder ,baking soda till they mix well. 
  3. Mash the bananas well till there are no lumps or use the mixie to make a fine paste
  4. Add oil, mashed bananas, vanilla essence in a mixing bowl and mix well. Powder the sugar and mix it and fold well into this mixture.
  5. Add the milk and mix well.
  6. Now add the flour,baking powder,baking soda mix to the above mixture and mix well .It should be a normal flowy consistency , neither too thick nor too runny. 
  7. Add chopped walnuts and raisins and give a quick stir.
  8. Grease a loaf tin with some oil evenly and add the batter to it. 
  9. Bake at same temperature for 40-45 minutes insert a skewer in the middle to see if it comes out clean , then your cake is done.
  10. Serve hot at teatime.I dribbled a little chocolate sauce as I love the flavour of chocolate.


Notes:
  • It is healthy because of whole wheat flour, if you want it tastier you can use equal portions of all purpose and whole wheat flour.
  • Butter can be used in place of oil , again it will compromise on the health quotient of the dish.
  • You can adjust the consistency of the batter with milk.
