Mixed veg curry - Indian

Roties and chapatis are a favourite among many and making a suitable side dish to relish it on a daily basis is a challenge. It is equally difficult to make something with a medley of different vegetables and be very tasty at the same time. Here is a simple vegetable curry carrying an assortment of vegetables and will be devoured by both young and old equally. If making for older people ,reduce the cashews or just avoid it . The good thing is the choice of mixed vegetables is yours - you can mix and match the vegetables available in your pantry .These are some of the easy cooking recipes for dinner. So go ahead and try this mixed vegetable curry and enjoy your roties.

Serves :3

Ingredients:
Mixed Vegetables(chopped in one inch size) - 2 cups
(You can add carrot,capsicum,onion,french beans,baby corn,cauliflower,paneer etc)
Onion - 1
Tomatoes - 3
Ginger garlic paste - 1 teaspoon
Garam masala powder - 1 teaspoon
Chilli powder - 1 teaspoon
Turmeric Powder - 1/2 teaspoon
Coriander Powder - 1 and half teaspoons 
Cashews/Almonds - 6-7 (soaked in milk)
Coriander leaves - to garnish
Salt and Oil - as required.

Method:
  1. Make a paste of the tomatoes,onion and keep aside . Boil and par cook the vegetables(except onion and capsicum) till they are cooked but crunchy and not soft.If using cauliflower ,cook separately as it cooks too fast.If using onion-capsicum,fry in a teaspoon of oil and keep separate.
  2. Make a paste of the cashew/almond and keep aside.
  3. Take a pan. Heat some oil or ghee and add ginger garlic paste and fry . Add the ground tomato-onion paste and fry . Add the tumeric ,chilli,coriander powders and a little salt and let it simmer on a low flame for a few minutes till the oil starts separating and the gravy looks cooked.
  4. Add the cooked vegetables and the onion,capsicum and and mix well . Add the cashew paste and adjust the salt . Add garam masala ,mix and let it cook together for about two minutes. Switch off and garnish with coriander leaves.
  5. Serve hot with roti,rice or naan.
                                    
Notes:
  • You can add fresh cream in the end instead of cashew paste ,it still tastes exotic.
  • The vegetables should not be well cooked but crunchy only then does the curry taste great.
  • Some people gring the tomatoes and onion paste separately and fry separate . This ensures better taste but consumes more time.So go ahead and try such easy cooking recipes and please your family.
