Veg Manchurian is a dish loved by people of all ages . While
it isn’t authentic Chinese , we Indians love this Indo Chinese fusion which can
be eaten as a plain dish or with fried rice and noodles.The recipe is simple and
easy to make and loved by kids . The recipe involves making veg balls and deep
frying or shallow frying in a paniyaram pan and adding to a soya sauce base .
Top with spring onions and you are ready to go.

Ingredients:
Assorted
Vegetables(Carrots/Cabbage/Beans/Capsicum) – 2 cups
Ginger garlic
paste – 1 teaspoon
Maida – 1 tablespoon
Corn flour –
1 tablespoon
Spring onions
– A cupful
Garlic
chopped finely – Around 8 pods
Soya sauce –
1 teaspoon
Tomato ketchup
– 1 tablespoon
Green chilli
sauce – 1 teaspoon
Vinegar – 1 teaspoon
Green
chillies finely chopped – 2
Oil for
frying
Salt as
required
1)Take all
the veggies in a bowl and add ginger garlic paste,salt,maida and cornflour .
Add a few drops of water till it is a thick mixture.
2)Make small
lemon sized balls and deep fry . For those who have paniyaram pan , the best
way to avoid excessive frying is by cooking the balls in the pan.
3)Drain oil
in a tissue paper and keep aside.
4)Take the
tomato,chilli and soya sauce and mix together . Add about two tablespoons of
water and a teaspoon of corn flour and keep aside.
5)In a pan,
add a tablespoon of oil and add ginger and green chillies.fry for about two
minutes and add spring onions and a handful of capsicum and fry for two minutes
. Add the manchurian balls and stir fry for a minute. Add the soya,chilli sauce
mixture and mix. If the sauce is too thick , add some water . If it is too
runny , add some corn flour.
6)Once the
sauce reaches thick consistency add vinegar,switch off and garnish with a sprig
of spring onions.It tastes great eaten plain or with fried rice or noodles.
