The word pancakes always
had a dreamy sound for me right from childhood and I always wanted to try
it.The other day I saw a recipe on TV for pancakes and caramelised apples and
wanted to try it immediately but was apprehensive it would be too sweet for my
liking. But I found it to be mildly sweet and eating with toast might
compensate for those who don't prefer an all sweet breakfast.

Ingredients
For pancakes:
All purpose flour - 1 1/2 cups
Sugar(powdered) - 2 and 1/2 tablespoons
Salt - a pinch
Baking powder - 1 teaspoon
Egg - 1
Butter - 1 tablespoon

Assorted toppings, such
as butter, maple syrup, honey, jams, preserves, sweetened whipped cream,
or chocolate syrup
For caramelised apples:
Apples -2
Brown sugar/ ordinary sugar - 2 tablespoons
Powdered cinnamon - a pinch

Cornflour – 1 teaspoon
Water – ¼ cup
Butter - 2 teaspoons

Method:
Pancakes:
- In a medium bowl, whisk together milk, butter (or oil), and egg. Add the flour,salt,baking powder and sugar to milk mixture; whisk until just moistened (do not overmix).
- It should not be too thick or runny but of dosa batter consistency.
- Heat a non stick pan, spread a teaspoon of butter .Spread the batter into a circle and cook till bubbles appear and the underside is golden brown.
- Flip over and cook on the otherside .Remove and serve immediately with your favourite syrup and topped with caramelized apples.
Caramalised apples:
- In a frying pan , melt butter over medium heat and add apples.Cook,stirring constantly,until apples are almost tender for a few minutes.
- Dissolve cornflour in water,add to pan. Stir in brown sugar or powdered sugar and cinnamon.
- Cook for a couple of minutes till the sugar gels with apple and serve with pancakes.
Notes:
- Pancakes have to be served hot
so prepare only if you can eat immediately.
- Batter should be of correct consistency and sugar can be adjusted according to taste.The above quantity gives medium sweetness.A serving of pancake of 100 gms contains 227 calories approximately.
