Soya Poha cutlets
Cutlets are loved by people of all age groups and can be made with a wide variety of ingredients . It is a sure shot way to make kids eat vegetables they loathe by hiding it in the cutlets . They can be taken as an evening snack and even a good lunch box item for kids . They require no side dishes and a dollop of ketchup is enough for a light wholesome food.
So here's a light cutlet for kids not loaded just with potatoes but a host of healthy items . You can use very little potatoes as a binding agent but I avoided potatoes althogether and instead used poha or beaten rice for binding .

Cooking time : 10 minutes
Serves - 2
Ingredients 
Poha - 1/2 cup
Soya chunks or granules - 1 cup
Chopped onions - 1
Grated carrot - 1 small
Ginger garlic paste - 1/2 teaspoon
Chat masala - 1/2 teaspoon
Garam masala - 1/2 teaspoon
Chilli powder - small pinch ( for kids , for adults adjust as required)
Coriander and mint leaves finely chopped - half cup
Salt - as required
Corn flour - 2 tablespoon
Bread crumbs - 1/2 cup
Oil - for shallow frying
Method:
1)Soak the poha in water for a few minutes , when it is well soaked , squeeze and remove water and add to a mixing bowl.
2)Add the soya chunks or granules to hot water till it is soft .If your using soya granules , squeeze out the water , wash with cool water and squeeze again and add to the bowl.
3)If using soya chunks wash with cool water and just give a small pulse in the blender . It should be very coarse and not a paste hence squeeze out the water completely before using the blender. Add this to the bowl .
4)Add all the other ingredients listed with 2 teaspoons of bread crumbs and mix well and completely with your fingers. They should all bind together . For those who find it difficult to bind , add a small mashed potato .

5)Flatten out as patties and refrigerate for half an hour .This makes the patties firm.
6)Make a thick paste using corn flour and water. Dip the patties in this batter and coat well with bread crumbs . Press well and again dip in the batter and coat with bread crumbs .This double coating is to get a really crispy layer.
7)Deep or shallow fry the patties in oil and serve hot with tomato ketchup or mint chutney.

Tips:
  • If you feel its messy , you can stop with single coating of bread crumbs .
  • You could use your imagination and have different combinations for the cutlet like - soya-crushed corn,poha-potato,paneer-poha etc and add to its nutrition.
  • If baking ,preheat the oven to around 250 degrees and bake for about 20 minutes .
